RECIPE #5: Coconut Chocolate Chip
Coconut is one of my favorite foods, but it didn’t used to be that way. In fact, I pretty much grew up hating anything to do with coconut! As a child, I only tried it as a overly sweetened component of a candy bar like Mounds or Almond Joy. I never really experienced coconut’s true flavor.
Now, as a grown up, I put coconut oil and coconut flakes on everything! Coconut’s sweet-yet-creamy flavor (especially in a dessert) makes me feel like I’m on vacation!
The Lemon Essential Oil in the recipe helps balance and brighten the flavors. Again, I love the power that a single essential oil drop can bring (instead of lemon juice which would dilute the other flavors).
This Coconut Chocolate Chip popsicle recipe is my take on what a coconut-infused dessert can taste like (without the overpowering sweetness that masks the coconut flavor). Enjoy this healthier version of a coconut-flavored treat!
Ingredients:
3 bananas
3 tbsp coconut oil (I like Dr. Bronner’s Coconut Oil)
1 1/2 cup coconut cream
1 tsp vanilla extract
1/3 cup chocolate chips
1 drop Rocky Mountain Oils Lemon Essential Oil
Directions:
Blend all ingredients (except for the chocolate) in a Vita Mix blender. Sprinkle a small amount of the chocolate chips in each popsicle mold and pour in the mixture on top. Repeat this process until the chocolate chips are “suspended” throughout the liquid (I use a wooden skewer to stir the contents).
Freeze popsicles without sticks for one hour (meanwhile, soak your wooden sticks). After one hour, insert sticks and freeze an additional 2 hours or more. Enjoy!
