Recipe #7: Watermelon Blueberry Mint
When it’s hot outside and I want to treat myself, I’ll head to a smoothie and juice bar in my town. I’ve been there several times but my hands-down favorite? The Strawberry Mint Julep.
I created this flavor as a tribute to my favorite drink at the smoothie place. A tribute… with a watermelon twist.
You wouldn’t think that mint belongs anywhere near a strawberry (or in this popsicle recipe, a watermelon) but it really tastes fantastic (and there’s just a hint in there)!
And what about the blueberries? They’re just to add a punch of flavor (and great blue color) to the popsicle. Give this recipe a try!
Ingredients:
3 cups watermelon, rind and seeds removed
3 tbsp honey
1/2 cup milk (cow’s milk or non dairy)
1/3 cup frozen blueberries
1/2 drop Rocky Mountain Oils Peppermint Essential Oil (run a toothpick over the rim of the essential oil and swirl this around in the mixture)
Directions:
Blend all ingredients (except for the chocolate) in a Vita Mix. Sprinkle a small amount of the chocolate chips in each popsicle mold and pour in the mixture on top. Repeat this process until the chocolate chips are “suspended” throughout the liquid (I use a wooden skewer to stir the contents).
Freeze popsicles without sticks for one hour (meanwhile, soak your wooden sticks). After one hour, insert sticks and freeze an additional 2 hours or more. Enjoy!
