RECIPE #1: Chocolate Mint Popsicle

This popsicle takes that Peppermint-Patty-taste to a whole new level! The cool creamy chocolate (with that refreshing zing of mint flavor) is perfect for the hottest summer days!

And where does that awesome mint flavor come from?

Here’s the big reveal… essential oils!

peppermint--WEBYes, all of the popsicle recipes have essential oils in them, and in the Chocolate Mint popsicle recipe, the essential oil used is Peppermint!

Why not just use real mint instead of the essential oil? Great question!

First, you’d have to use quite a bit of real mint leaves to get the same amount of peppermint flavor that you can get from 1 drop of peppermint essential oil. And all those extra “green parts” of the plant would not only impart green color to the popsicle but also a “green taste” to the popsicles. Not what you want.

Second, using an essential oil to flavor food means that you don’t have to have the fresh herb or plant on hand. If you have a bottle of peppermint essential oil, you can pull it out whenever you want to add a mint flavor to a dish.

NOTE: Not all essential oils can be used as a food flavoring! All of the essential oils mentioned in this post are safe to use in food, but before adding any essential oil to food, it’s imperative that you know whether or not that essential oil is safe to be ingested, even in this small amount. Rocky Mountain Oils shares more about cooking with essential oils here.

Ingredients:

3 bananas

4 tbsp honey or maple syrup

1/4 cup cocoa powder

1 cup milk (cow’s milk or other non-dairy milk)

1 drop Rocky Mountain Oil’s Peppermint Essential Oil (not the same as Peppermint Extract)

Directions:

Blend fully in a Vita Mix blender and pour into the popsicle molds. Freeze popsicles without sticks for one hour (meanwhile, soak your wooden sticks). After one hour, insert sticks and freeze an additional 2 hours or more. Enjoy!
