Paleo Pizza Crust
First, let’s start with the ingredients (skip to the end of the post for the actual amounts for each and the official instructions).
Coconut flour, almond meal (and surprise!) eggs make up this crust. Tapioca flour, however, is the reason behind the crust’s flexibility and tenderness. It’s the reason why you’ll be able to pick up your pizza slice and eat it with your hands (the way pizza is intended!).
Add the ingredients to a high speed blender like a Vita Mix. I know, your Italian grandma would squawk at this, but she never had to make a pizza crust without flour, did she? I’m telling you, the mighty Vita-Mix is the bomb to mixing up doughs like this. Everything comes out nice and smooth.
Then you’re going to do something else unconventional: You’re going to heat up a 12″ frying pan… and you’re going to pre-cook the crust, kind of like a large pancake.
Again, you’re saying, “What?!” But trust me on this. Just start pouring and spreading about 1/2 cup of the dough mixture into a hot, lightly greased 12″ skillet. Let it cook and harden on one side, and then flip it over and cook on the other side.

As you’re cooking up your crusts (you’ll end up with about 5 of them), transfer them to a plate with a sheet of wax paper. Place wax paper sheets over each crust as you add them on the plate (so that they don’t stick together).
Next, using the wax paper as a carrying tool, move the crusts to the baking sheet one at a time. Flip them over onto the baking sheet and peel the wax paper off.
Note: If you prefer a more crispy and less flexible crust, cook the crusts for 3-4 minutes in a 425 degree oven before you add the sauce and toppings.
Next, add the pizza sauce to the crusts.
And then the cheese (if you’re going full Paleo, you’d skip the cheese part of course).
Chop up and add whatever toppings you’d like.
Place the toppings on the pizza crusts, and sprinkle with a little more cheese (if you’re using it).
Bake at 425 degrees for 10-12 minutes, and then for 5 minutes on a low broil setting until the cheese is melted and the crust and toppings are slightly browned.
Remove the pizza from the oven and add any other delicate toppings at this time (chopped baby tomatoes, basil, etc).
Yay! Look at that crust! Real pizza!
